Ingredients
Scale
1 cup fresh strawberries, hulled and halved
1/2 cup granulated sugar
1/2 cup water
1 cup milk (dairy or oat milk for dairy free strawberry milk)
1/2 teaspoon vanilla extract
Instructions
Combine the fresh strawberries, sugar, and water in a small saucepan.
Heat the mixture over medium heat, stirring occasionally until the sugar dissolves and the strawberries soften, about 5 to 7 minutes. This creates your strawberry syrup for milk.
Remove the saucepan from the heat and let the syrup cool slightly. You can mash the strawberries lightly with a fork for more flavor.
Strain the syrup through a fine-mesh sieve into a bowl, pressing on the solids to extract all the liquid. Discard the solids or save them for another use.
In a glass, combine 2 to 3 tablespoons of the fresh strawberry syrup (adjust to your taste) with 1 cup of your chosen milk and the vanilla extract.
Stir well until fully combined. For a creamy pink drink, serve immediately over ice.
Notes
For a Korean strawberry milk style, use whole milk and layer the syrup at the bottom before gently pouring the milk over it.
To make whipped strawberry milk, whip heavy cream with a small amount of the syrup until soft peaks form, then top your cold milk mixture with the whipped topping.
This recipe makes a versatile strawberry syrup that keeps well in the refrigerator for up to one week.
