1 tablespoon vegetable oil
1 pound ground beef
1 cup chopped yellow onion
1 cup chopped carrots
1 cup frozen peas
2 cloves garlic, minced
3 cups cooked day-old rice
2 large eggs, beaten
1/4 cup soy sauce
2 tablespoons oyster sauce
1 tablespoon sesame oil
2 green onions, sliced
Instructions
Heat vegetable oil in a large skillet or wok over high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
Add chopped onion and carrots to the skillet. Cook, stirring frequently, until the vegetables are tender-crisp, about 5 minutes.
Stir in the frozen peas and minced garlic. Cook for 1 minute more until fragrant.
Push the beef and vegetable mixture to one side of the skillet. Pour the beaten eggs into the empty side and scramble until cooked through.
Add the cooked day-old rice to the skillet. Break up any clumps of rice.
In a small bowl, whisk together soy sauce, oyster sauce, and sesame oil. Pour the sauce mixture over the rice and beef.
Stir everything together until well combined and heated through, about 3-5 minutes.
Stir in the sliced green onions. Serve immediately.
