A simple recipe for creamy, flavorful garlic aioli that elevates sandwiches, vegetables, and seafood.

  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, minced
  • 1/2 cup neutral oil (like canola or grapeseed)
  • Salt to taste

Instructions

  1. In a medium bowl, whisk together the egg yolk, Dijon mustard, and lemon juice until combined.
  2. Add the minced garlic and whisk again.
  3. Slowly drizzle in the neutral oil, a few drops at a time, while whisking constantly. As the mixture begins to emulsify and thicken, you can gradually increase the oil to a thin, steady stream.
  4. Continue whisking until all the oil is incorporated and the aioli is thick and creamy.
  5. Season with salt and black pepper to your taste.
  6. Transfer the aioli to an airtight container and refrigerate until ready to use.
