A no-bake layered dessert featuring a pecan crust, creamy cheesecake filling, pudding, and a sweet cherry topping. Perfect for potlucks and holiday gatherings.

  • 1 ½ cups crushed pecans
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 (12 ounce) container frozen whipped topping, thawed
  • 1 (3.4 ounce) package instant vanilla pudding mix
  • 2 cups milk
  • 1 (21 ounce) can cherry pie filling

Instructions

  1. In a medium bowl, combine crushed pecans, granulated sugar, and melted butter. Press mixture evenly into the bottom of a 9×13 inch baking pan.
  2. In a separate large bowl, beat softened cream cheese, powdered sugar, and vanilla extract until smooth. Gently fold in the thawed whipped topping until well combined. Spread this cream cheese mixture evenly over the pecan crust.
  3. In another bowl, whisk together the instant vanilla pudding mix and milk until thickened, about 2 minutes. Let stand for 5 minutes. Spread the pudding mixture evenly over the cream cheese layer.
  4. Spoon the cherry pie filling over the pudding layer, spreading it gently to cover.
  5. Cover the pan with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the layers to set.
  6. Slice and serve cold.

Notes

  • For cleaner slices, run a knife under hot water and wipe dry between cuts.
  • This dessert can be made a day in advance, making it ideal for parties.
  • You can substitute walnuts for pecans in the crust if preferred.
