1 pound beef sirloin, thinly sliced
2 tablespoons soy sauce
1 tablespoon cornstarch
2 tablespoons vegetable oil, divided
1 cup broccoli florets
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 cup snap peas
1/2 cup sliced carrots
2 cloves garlic, minced
1 teaspoon grated fresh ginger
1/4 cup stir fry sauce (teriyaki or garlic flavor)
Cooked rice or noodles, for serving
Instructions
In a bowl, toss beef with soy sauce and cornstarch.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add beef and stir-fry until browned. Remove beef from skillet and set aside.
Add remaining 1 tablespoon of vegetable oil to the skillet. Add broccoli, bell peppers, snap peas, and carrots. Stir-fry for 5-7 minutes, until vegetables are tender-crisp.
Add garlic and ginger to the skillet and cook for 1 minute more, until fragrant.
Return beef to the skillet. Pour in stir fry sauce and toss to coat everything. Cook for 1-2 minutes, until heated through.
Serve immediately over cooked rice or noodles.
Notes
For a spicier dish, add red pepper flakes with the garlic and ginger.
Feel free to substitute your favorite stir-fry vegetables.
