A fast and colorful beef stir fry loaded with vegetables, perfect for busy weeknights.

  • 1 pound beef sirloin, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil, divided
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snap peas
  • 1/2 cup sliced carrots
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 cup stir fry sauce (teriyaki or garlic flavor)
  • Cooked rice or noodles, for serving

Instructions

  1. In a bowl, toss beef with soy sauce and cornstarch.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add beef and stir-fry until browned. Remove beef from skillet and set aside.
  3. Add remaining 1 tablespoon of vegetable oil to the skillet. Add broccoli, bell peppers, snap peas, and carrots. Stir-fry for 5-7 minutes, until vegetables are tender-crisp.
  4. Add garlic and ginger to the skillet and cook for 1 minute more, until fragrant.
  5. Return beef to the skillet. Pour in stir fry sauce and toss to coat everything. Cook for 1-2 minutes, until heated through.
  6. Serve immediately over cooked rice or noodles.

Notes

  • For a spicier dish, add red pepper flakes with the garlic and ginger.
  • Feel free to substitute your favorite stir-fry vegetables.
  • This stir fry is great for meal prep. Portion into containers with rice or noodles for easy lunches.
