Make these simple, low-carb zucchini pizza bites for a quick appetizer or healthy snack. They use zucchini slices as the base, topped with pizza sauce and cheese, and bake up perfectly crisp.

  • 2 medium zucchini
  • 1 teaspoon salt, divided
  • 1 large egg, lightly beaten
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup almond flour (for low carb/keto)
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1/4 cup pizza sauce or marinara
  • 1/2 cup shredded mozzarella cheese
  • Optional toppings: Pepperoni slices, basil

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash the zucchini and slice them into rounds about 1/2 inch thick.
  3. Place the zucchini slices on a paper towel-lined plate. Sprinkle them evenly with 1/2 teaspoon of salt. Let them sit for 10 minutes to draw out moisture.
  4. Gently squeeze the zucchini slices between paper towels to remove as much liquid as possible. This step is key for crispy zucchini pizza bites.
  5. In a medium bowl, combine the squeezed zucchini, beaten egg, Parmesan cheese, almond flour, oregano, and garlic powder. Mix until just combined.
  6. Place the zucchini mixture onto the prepared baking sheet, forming small, flattened ‘pizzas’ or mounds, about 2 inches wide.
  7. Bake the zucchini bases for 10 minutes until they start to firm up.
  8. Remove the sheet from the oven. Top each base with a small amount of pizza sauce, followed by mozzarella cheese and any desired toppings.
  9. Return the baking sheet to the oven and bake for another 5 to 8 minutes, or until the cheese is melted and bubbly and the edges of the zucchini are golden brown.
  10. Serve immediately as a quick zucchini appetizer or healthy pizza alternative.

  • For air fryer zucchini pizza bites, arrange the topped bites in a single layer in the air fryer basket. Cook at 375°F (190°C) for 6 to 8 minutes, checking halfway through until the cheese is melted.
  • To maximize crispiness, ensure you squeeze out all excess water from the zucchini after salting.
  • You can use regular flour instead of almond flour if you are not following a low-carb or keto diet.
