  • 1/2 cup all-purpose flour
  • 1 large egg, beaten
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh chives or green onions

  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil, for frying

Instructions

  1. In a medium bowl, combine the grated zucchini, flour, beaten egg, Parmesan cheese, chives, salt, and pepper. Mix until just combined.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Drop heaping tablespoons of the zucchini mixture into the hot skillet, flattening them slightly with the back of the spoon to form patties.
  4. Cook for 3-4 minutes per side, until golden brown and crispy.
  5. Remove the fritters from the skillet and drain on paper towels.
  6. Serve hot.

  • For extra crispy fritters, ensure you squeeze as much moisture as possible from the grated zucchini.
  • You can bake these fritters at 400°F (200°C) for 15-20 minutes, flipping halfway through, for a healthier option.
  • Air fryer instructions: Preheat air fryer to 375°F (190°C). Lightly spray fritters with oil. Cook for 8-10 minutes, flipping halfway, until golden and crisp.
