  • 2 (6-ounce) tuna steaks, about 1 inch thick
  • 1 tablespoon soy sauce
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon minced garlic
  • 1/2 teaspoon brown sugar
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 1 tablespoon olive oil

Instructions

  1. Pat the tuna steaks completely dry with paper towels. This helps create a good crust.
  2. In a small bowl, whisk together the soy sauce, ginger, garlic, brown sugar, smoked paprika, black pepper, and cayenne pepper (if using) to create the glaze base.
  3. Brush or rub the glaze mixture evenly over all sides of the tuna steaks. Let them sit for 5 minutes while you heat the pan.
  4. Heat the olive oil in a heavy skillet (cast iron works best) over medium-high heat until it shimmers.
  5. Carefully place the seasoned tuna steaks in the hot skillet. Sear for 2 to 3 minutes per side for rare to medium-rare, depending on thickness. You want a dark crust and a cool, deep red center.
  6. Remove the tuna steaks from the pan immediately.
  7. Let the tuna rest on a cutting board for 3 minutes before slicing against the grain. Serve right away.

Notes

  • For a true blackened flavor, increase the smoked paprika and pepper slightly.
  • If you prefer grilling, use the same rub and grill over high heat for 2-3 minutes per side.
