You need a crowd-pleasing dip for your next gathering. This Ultimate Meaty & Cheesy Texas Trash Dip layers refried beans, seasoned ground beef, and creamy cheese for a hot, gooey Tex-Mex appetizer that disappears fast. It is simple to assemble and perfect for game day.

  • 1 pound ground beef
  • 1 packet (1 ounce) taco seasoning
  • 1 can (16 ounces) refried beans, not fat-free
  • 1 package (8 ounces) cream cheese, softened
  • 1 cup sour cream
  • 1 can (10 ounces) diced tomatoes and green chilies (like Ro-Tel), drained
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Colby Jack cheese (for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish or a similar sized oven-safe skillet.
  2. Cook the ground beef in a skillet over medium heat until fully browned. Drain off any excess grease. Stir in the taco seasoning and about 2 tablespoons of water, cooking according to the seasoning packet directions until the liquid reduces. Set aside.
  3. In a medium bowl, mix the softened cream cheese, sour cream, and half of the taco seasoning packet until smooth and combined.
  4. Spread the refried beans evenly across the bottom of the prepared baking dish.
  5. Spread the cream cheese mixture over the layer of refried beans.
  6. Spread the cooked, seasoned ground beef evenly over the cream cheese layer.
  7. Top the beef layer with the drained diced tomatoes and green chilies.
  8. Mix the Monterey Jack and cheddar cheeses together. Sprinkle this cheese mixture evenly over the top layer. Sprinkle the Colby Jack cheese on top of that.
  9. Bake for 20 to 25 minutes, or until the dip is hot throughout and the cheese is melted and bubbly.
  10. Let the dip cool for 5 minutes before serving hot with your favorite tortilla chips.

Notes

  • For a slow cooker trash dip variation, layer all ingredients in a small (1.5 to 2 quart) slow cooker. Cook on LOW for 2 to 3 hours or on HIGH for 1 to 1.5 hours, stirring halfway through.
  • You can prepare the layers (except the final cheese topping) a day ahead. Cover and refrigerate. Add the final cheese topping before baking.
