  • 1 1/2 cups very ripe mashed bananas (about 34 large bananas)
  • 1/4 cup unsweetened applesauce
  • 1/4 cup monk fruit sweetener blend (or stevia equivalent for 1/2 cup sugar)
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set this dry mixture aside.
  3. In a large bowl, combine the melted butter, eggs, vanilla extract, mashed bananas, applesauce, and monk fruit sweetener. Whisk until these wet ingredients are fully combined.
  4. Add the dry ingredients to the wet ingredients. Mix gently with a spatula until just combined. Do not overmix; a few streaks of flour are acceptable.
  5. If using, fold in the chopped nuts.
  6. Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
  7. Bake for 18 to 22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
