Make these easy bacon wrapped stuffed dates for an elegant appetizer. They combine sweet dates, creamy goat cheese, crunchy almonds, and salty bacon for a perfect sweet and savory snack.

  • 24 Medjool dates
  • 4 ounces soft goat cheese, room temperature
  • 24 whole almonds
  • 12 slices thin-cut bacon, halved lengthwise
  • 1 tablespoon honey (optional, for drizzling)
  • Freshly ground black pepper (optional)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. Carefully slice each date lengthwise down one side, opening it slightly without cutting all the way through. Remove the pit from each date.
  3. Stuff each date cavity with a small amount of goat cheese, about half a teaspoon. Press one whole almond into the cheese filling in each date.
  4. Wrap one half-slice of bacon tightly around each stuffed date, securing the opening. You may need a toothpick to hold the bacon in place if it does not stay wrapped.
  5. Place the wrapped dates seam-side down on the prepared baking sheet.
  6. Bake for 15 to 20 minutes, turning halfway through, until the bacon is crisp and the dates are slightly caramelized.
  7. Remove from the oven. If desired, drizzle lightly with honey and sprinkle with black pepper immediately after baking.
  8. Serve warm as a party appetizer or elegant finger food.

Notes

  • If you prefer a creamier filling, substitute mascarpone cheese for the goat cheese.
  • You can prepare these bacon wrapped stuffed dates up to the wrapping stage ahead of time. Cover and refrigerate for up to 4 hours before baking.
  • For a quicker crisping time, you can finish these under the broiler for the last 1-2 minutes, watching closely to prevent burning.
