You will make a simple, savory, and creamy yellow squash casserole topped with a crunchy, buttery Ritz cracker crust. This is a perfect comfort food side dish for any gathering.

  • 3 lbs yellow summer squash, thinly sliced
  • 1 medium onion, finely chopped
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 2 large eggs, lightly beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 sleeve (about 28 crackers) Ritz crackers, crushed
  • 6 tablespoons unsalted butter, melted

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Place the sliced squash and chopped onion in a large pot. Add water to cover and bring to a boil. Cook for 5 to 7 minutes, or until the squash is tender-crisp. Drain the squash and onion mixture very well. Press out any excess liquid using a colander or paper towels. This step is important for a creamy casserole.
  3. In a large bowl, combine the drained squash and onion, cheddar cheese, sour cream, mayonnaise, eggs, salt, pepper, and garlic powder. Mix gently until everything is just combined.
  4. Spread the squash mixture evenly into the prepared baking dish.
  5. In a small bowl, combine the crushed Ritz crackers and the melted butter. Toss until the crackers are evenly coated.
  6. Sprinkle the buttery cracker mixture evenly over the top of the squash casserole.
  7. Bake for 25 to 30 minutes, or until the casserole is heated through and the topping is golden brown and crisp.
  8. Let the casserole rest for 5 minutes before serving.

Notes

  • For a make-ahead option, prepare the casserole base and topping separately, store them covered in the refrigerator for up to 24 hours, and then assemble and bake just before serving.
  • You can add 1/4 cup of grated Parmesan cheese to the cracker topping for extra flavor.
  • If you prefer a less watery casserole, you can lightly sauté the squash and onion instead of boiling them, but be sure to cook until most of the moisture has evaporated.
