A quick and creamy one-pot pasta dish featuring tender spinach and a garlicky Parmesan Alfredo sauce. Perfect for a weeknight meal with minimal cleanup.

Ingredients

  • 1 pound fettuccine pasta
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 5 ounces fresh spinach
  • 2 tablespoons butter

Instructions

  1. In a large skillet or pot, combine the uncooked fettuccine, broth, heavy cream, Parmesan cheese, minced garlic, salt, and pepper.
  2. Bring the mixture to a boil over medium-high heat, stirring occasionally to prevent sticking.
  3. Once boiling, reduce the heat to medium-low, cover, and simmer for 10-12 minutes, or until the pasta is al dente and most of the liquid has been absorbed, stirring occasionally.
  4. Stir in the fresh spinach and butter until the spinach wilts and the sauce is creamy.
  5. Serve immediately.

Notes

  • For a richer sauce, add an extra tablespoon of butter.
  • You can add cooked chicken or shrimp for a non-vegetarian option.
  • Garnish with extra Parmesan cheese and fresh parsley if desired.
