A simple dump-and-go slow cooker recipe for a sweet and savory honey garlic chicken served over noodles. Perfect for an easy weeknight dinner.

  • 2 pounds boneless, skinless chicken thighs
  • 1 cup low-sodium soy sauce
  • 1/2 cup honey
  • 1/4 cup packed brown sugar
  • 1/4 cup rice vinegar
  • 4 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • 1/4 cup water
  • 12 ounces egg noodles
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Place chicken thighs in the slow cooker.
  2. In a medium bowl, whisk together soy sauce, honey, brown sugar, rice vinegar, minced garlic, grated ginger, and sesame oil.
  3. Pour the sauce mixture over the chicken in the slow cooker.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  5. Remove chicken from the slow cooker and shred it with two forks. Return the shredded chicken to the slow cooker.
  6. In a small bowl, whisk together cornstarch and water to create a slurry. Stir the slurry into the slow cooker with the chicken and sauce.
  7. Turn the slow cooker to high and cook for another 15-20 minutes, or until the sauce has thickened.
  8. Meanwhile, cook egg noodles according to package directions. Drain well.
  9. Serve the honey garlic chicken and sauce over the cooked noodles.
  10. Garnish with sliced green onions and sesame seeds.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the sauce.
  • You can substitute chicken breasts for thighs, but reduce the cooking time to prevent them from drying out.
  • This recipe is great for meal prep. Store leftovers in airtight containers in the refrigerator for up to 3 days.
