- 2 pounds boneless, skinless chicken thighs
- 1 cup low-sodium soy sauce
- 1/2 cup honey
- 1/4 cup packed brown sugar
- 1/4 cup rice vinegar
- 4 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch
- 1/4 cup water
- 12 ounces egg noodles
- 2 green onions, sliced
- 1 tablespoon sesame seeds
- Place chicken thighs in the slow cooker.
- In a medium bowl, whisk together soy sauce, honey, brown sugar, rice vinegar, minced garlic, grated ginger, and sesame oil.
- Pour the sauce mixture over the chicken in the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
- Remove chicken from the slow cooker and shred it with two forks. Return the shredded chicken to the slow cooker.
- In a small bowl, whisk together cornstarch and water to create a slurry. Stir the slurry into the slow cooker with the chicken and sauce.
- Turn the slow cooker to high and cook for another 15-20 minutes, or until the sauce has thickened.
- Meanwhile, cook egg noodles according to package directions. Drain well.
- Serve the honey garlic chicken and sauce over the cooked noodles.
- Garnish with sliced green onions and sesame seeds.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the sauce.
- You can substitute chicken breasts for thighs, but reduce the cooking time to prevent them from drying out.
