Quick Sausage and Egg Breakfast Wraps

Make these hearty, cheesy sausage and egg breakfast wraps in 20 minutes. They are perfect for meal prep and can be frozen for grab-and-go mornings.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound breakfast sausage, casings removed
  • 8 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 (8-inch) flour tortillas
  • 2 cups shredded cheddar cheese

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add sausage and cook, breaking it up with a spoon, until browned and cooked through. Drain off any excess grease.
  2. While the sausage cooks, whisk together eggs, milk, salt, and pepper in a medium bowl.
  3. Pour the egg mixture over the cooked sausage in the skillet. Cook, stirring occasionally, until the eggs are set.
  4. Warm the tortillas according to package directions.
  5. Spoon the sausage and egg mixture evenly into the center of each tortilla. Top with shredded cheese.
  6. Fold in the sides of each tortilla, then roll up tightly from the bottom to create a wrap.

Notes

  • To freeze, wrap each cooled breakfast wrap individually in plastic wrap, then place in a freezer bag. Reheat in the microwave for 1-2 minutes, or until heated through.
  • For a spicier wrap, add a pinch of red pepper flakes to the egg mixture.
  • You can substitute turkey sausage for pork sausage.
