  • 1 box (15.25 oz) spice cake mix
  • 1 can (15 oz) pure pumpkin puree
  • 1 can (12 oz) evaporated milk
  • 4 large eggs
  • 1/2 cup granulated sugar
  • 1 teaspoon pumpkin pie spice
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 350 degrees F. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, mix the pumpkin puree, evaporated milk, eggs, granulated sugar, and pumpkin pie spice until combined. This forms the bottom layer.
  3. Pour the pumpkin mixture evenly into the prepared baking dish.
  4. Sprinkle the dry spice cake mix evenly over the top of the pumpkin layer. Do not stir.
  5. Drizzle the melted butter evenly over the dry cake mix.
  6. If you are using pecans, sprinkle them over the butter layer now.
  7. Bake for 50 to 60 minutes, or until the topping is golden brown and a toothpick inserted near the center comes out clean. The center should be set and gooey.
  8. Let the cake cool slightly before serving warm.

Notes

  • For a richer flavor, substitute the spice cake mix with yellow cake mix and add 1 teaspoon of extra pumpkin pie spice to the pumpkin layer.
  • This dessert is excellent served warm with a scoop of vanilla ice cream or whipped cream.
  • If you skip the pecans, you can still achieve a buttery topping by ensuring the butter is evenly distributed over the dry mix.
