- 2 cups pecan halves
- 1 cup (2 sticks) unsalted butter
- 2 cups packed light brown sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- Preheat your oven to 250°F (120°C). Grease a large baking sheet or line it with parchment paper.
- In a large bowl, combine the Crispix or Chex cereal and pecan halves.
- In a medium saucepan, melt the butter over medium heat.
- Stir in the brown sugar until dissolved and the mixture is smooth. Bring to a gentle boil and cook for 5 minutes, stirring constantly.
- Remove the saucepan from the heat and stir in the vanilla extract and salt.
- Pour the brown sugar mixture over the cereal and pecans in the large bowl. Stir gently until everything is evenly coated.
- Spread the coated mixture in a single layer on the prepared baking sheet.
- Bake for 1 hour, stirring every 15 minutes to ensure even crisping.
- Let the snack mix cool completely on the baking sheet. It will harden as it cools, forming clusters and shards.
- Once completely cool, break into desired cluster sizes.
- Store in an airtight container at room temperature. For gifts, package in cellophane bags or decorative tins.
