1 box (3.4 oz) instant pistachio pudding mix
1 box (15.25 oz) yellow cake mix
4 large eggs
1 cup vegetable oil
1 cup cold water
1 teaspoon vanilla extract
1/2 cup shelled, chopped pistachios (for batter)
1 cup powdered sugar (for glaze)
2 tablespoons fresh lemon juice (for glaze)
1 teaspoon lemon zest (for glaze)
1/4 cup chopped pistachios (for topping)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
In a large bowl, combine the instant pistachio pudding mix and the yellow cake mix. Whisk them together briefly.
Add the eggs, vegetable oil, cold water, and vanilla extract to the dry ingredients. Mix on low speed with an electric mixer until just combined. Do not overmix.
Gently fold in the 1/2 cup of chopped pistachios for the batter.
Pour the batter into the prepared loaf pan.
Bake for 50 to 60 minutes, or until a wooden pick inserted into the center comes out clean.
Let the bread cool in the pan for 15 minutes before carefully turning it out onto a wire rack to cool completely.
While the bread cools, prepare the glaze: In a small bowl, whisk together the powdered sugar, lemon juice, and lemon zest until smooth. Add more powdered sugar if the glaze is too thin.
Once the bread is completely cool, drizzle the lemon glaze evenly over the top. Sprinkle with the remaining 1/4 cup of chopped pistachios.
Slice and serve the bread.
Notes
For a sweeter, more intense pistachio flavor, substitute the water in the batter with 1 cup of milk.
If you prefer a less zesty topping, use almond extract instead of lemon juice in the glaze.
