  • 1 cup semi-sweet chocolate chips
  • 1 cup white chocolate chips
  • ½ cup crushed candy canes (plus extra for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. This step helps achieve chewy centers.
  3. Beat in the eggs one at a time, then mix in the vanilla extract.
  4. In a separate bowl, whisk together the flour and baking soda. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Stir in the semi-sweet chocolate chips, white chocolate chips, and crushed candy canes. Add the peppermint extract and mix briefly.
  6. Scoop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
  7. Bake for 9 to 11 minutes, or until the edges are set but the centers still look slightly soft. For extra chewiness, slightly underbake.
  8. Immediately after removing from the oven, press a few extra crushed candy cane pieces onto the tops of the warm cookies.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
