  • 1 cup creamy peanut butter
  • 1 cup (2 sticks) unsalted butter, softened
  • 4 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal. Lightly grease the paper.
  2. In a large bowl, combine the peanut butter and softened butter. Beat them together with an electric mixer until the mixture is completely smooth and creamy.
  3. Gradually add the sifted powdered sugar to the peanut butter mixture, mixing on low speed until just combined. Be careful not to overmix once the sugar is added.
  4. Mix in the vanilla extract until it is fully incorporated.
  5. Press the fudge mixture evenly into the prepared baking pan. Use a spatula or the back of a spoon to smooth the top surface.
  6. Refrigerate the fudge for at least 2 hours, or until firm enough to cut.
  7. Lift the fudge out of the pan using the parchment paper overhang. Cut the fudge into small squares.
