½ cup granulated sugar
2 large eggs, room temperature
½ cup unsalted butter, melted
1 teaspoon vanilla extract
4 ½ cups all-purpose flour, plus more for dusting
1 teaspoon salt
1 quart vegetable oil, for frying
12 peanut butter cups, unwrapped and halved
For the Glaze:
2 cups powdered sugar
½ cup unsweetened cocoa powder
½ cup milk
1 teaspoon vanilla extract

Instructions
In a large bowl, combine warm milk and yeast. Let stand for 5-10 minutes until foamy.
Stir in granulated sugar, eggs, melted butter, and vanilla extract.
In a separate bowl, whisk together flour and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
Place the dough in a greased bowl, cover with plastic wrap, and let rise in a warm place for 1-1.5 hours, or until doubled in size.
Punch down the dough and divide it into 12 equal pieces.
Flatten each piece of dough into a circle. Place 2 peanut butter cup halves in the center of half the dough circles.
Top with the remaining dough circles, pressing the edges firmly to seal the peanut butter cups inside. Crimp the edges with a fork.
Place the filled donuts on parchment-lined baking sheets, cover loosely, and let rise for another 30 minutes.
Heat vegetable oil in a large pot or Dutch oven to 350°F.
Carefully fry the donuts in batches for 2-3 minutes per side, until golden brown.
Remove donuts with a slotted spoon and place on a wire rack set over paper towels to drain.
While the donuts cool, prepare the glaze: Whisk together powdered sugar, cocoa powder, milk, vanilla extract, and salt until smooth.
Dip each warm donut into the chocolate glaze, ensuring it’s fully coated.
Place glazed donuts back on the wire rack to set.
Notes
Ensure your oil is at the correct temperature for even cooking. Too hot and the outside will burn before the inside cooks. Too cool and the donuts will be greasy.
For a bakery-style finish, you can add chopped peanuts or extra peanut butter cup pieces on top of the glaze before it sets.
If you prefer baked donuts, preheat your oven to 350°F (175°C) and bake in a greased donut pan for 10-12 minutes.
