1 pound kielbasa sausage, sliced
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes, undrained
4 cups chicken broth
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
12 ounces penne pasta
1 cup heavy cream
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
Instructions
Heat olive oil in a large pot or Dutch oven over medium heat. Add sliced kielbasa and cook until lightly browned, about 5 minutes. Remove sausage and set aside.
Add chopped onion to the pot and cook until softened, about 4 minutes. Add minced garlic and cook for 1 minute more until fragrant.
Pour in diced tomatoes (with juice), chicken broth, Italian seasoning, salt, and pepper. Bring the mixture to a boil.
Add the penne pasta to the boiling liquid. Stir well to prevent sticking.
Reduce heat to medium-low, cover the pot, and simmer for 10 to 12 minutes, or until the pasta is tender and most of the liquid is absorbed. Stir occasionally.
Stir in the heavy cream, cooked kielbasa, cheddar cheese, and Parmesan cheese. Cook, stirring constantly, until the cheese is melted and the sauce is creamy, about 2 to 3 minutes. Do not let it boil after adding the cream and cheese.
Serve immediately.
Notes
For added vegetables, stir in 1 cup of frozen peas or spinach during the last 5 minutes of cooking.
You can substitute smoked sausage for kielbasa if needed.
Use vegetable broth instead of chicken broth for a vegetarian option if you skip the kielbasa.
