Make this simple, flavorful olive oil bread dip in five minutes. It uses common pantry herbs and Parmesan cheese for a taste similar to popular Italian restaurants. Serve with warm crusty bread for an easy appetizer.

Ingredients

Scale
  • 1 cup extra virgin olive oil
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 tablespoons balsamic vinegar (optional)

Instructions

  1. Combine the minced garlic, dried oregano, dried basil, dried rosemary, red pepper flakes, black pepper, and salt in a shallow dipping bowl.
  2. Pour the balsamic vinegar, if using, over the spice mixture.
  3. Pour the extra virgin olive oil over the spices and vinegar.
  4. Stir the mixture gently to combine the seasonings into the oil.
  5. Sprinkle the grated Parmesan cheese evenly over the top of the oil.
  6. Let the dip rest at room temperature for at least 5 minutes before serving to allow the flavors to meld.
  7. Serve immediately with warm crusty bread, baguette, or focaccia.

Notes

  • For a stronger garlic flavor, let the minced garlic sit in the oil for 15 minutes before serving.
  • You can prepare the dry spice blend ahead of time and store it in an airtight container for up to one month.
  • This dip is excellent drizzled over grilled vegetables or used as a base for a simple salad dressing.
