  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried thyme
  • 1/2 cup heavy cream
  • 1 cup cooked, shredded chicken breast
  • 1 (16 ounce) package potato gnocchi
  • 2 cups fresh spinach, roughly chopped

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Cook until the vegetables soften, about 5 to 7 minutes.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Whisk the flour into the vegetables until fully combined, creating a roux. Cook for 1 minute, stirring constantly.
  4. Gradually whisk in the chicken broth until smooth. Stir in the Italian seasoning, salt, pepper, and thyme. Bring the mixture to a simmer.
  5. Reduce the heat to low and stir in the heavy cream and shredded chicken.
  6. Add the gnocchi to the pot. Cook according to package directions, usually about 3 to 5 minutes, until the gnocchi float to the surface.
  7. Stir in the fresh spinach until it wilts into the soup.
  8. Taste and adjust seasoning if needed before serving hot.

Notes

  • For a slow cooker version, sauté the vegetables and garlic first, then combine everything except the spinach and heavy cream in the slow cooker. Cook on low for 4 hours. Stir in the cream and spinach during the last 15 minutes of cooking.
  • Serve this hearty Italian soup with warm garlic bread for dipping.
  • You can substitute rotisserie chicken for the cooked, shredded chicken to save time on busy weeknights.
