Make a creamy, smooth nacho cheese sauce quickly with simple ingredients. This recipe is perfect for dipping chips, topping tacos, or serving with fries.

Ingredients

Scale
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1 cup milk
  • 8 ounces sharp cheddar cheese, shredded
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • Pinch of cayenne pepper (optional, for heat)

Instructions

  1. Melt the butter in a small saucepan over medium heat.
  2. Whisk in the flour to create a smooth paste (roux). Cook for one minute, stirring constantly.
  3. Slowly pour in the milk while whisking continuously to prevent lumps. Continue whisking until the mixture thickens slightly, about 2 to 3 minutes.
  4. Reduce the heat to low. Add the shredded cheddar cheese, salt, and garlic powder. Stir until the cheese is completely melted and the sauce is smooth.
  5. If you want a Taco Bell copycat flavor, stir in a small pinch of cayenne pepper or a drop of mild green chili sauce.
  6. Remove from heat and serve immediately over your favorite snacks.

Notes

  • Shred your own cheese for the smoothest sauce; pre-shredded cheese often contains anti-caking agents that can make the sauce grainy.
  • For an extra tangy flavor similar to commercial sauces, add 1/2 teaspoon of white vinegar or a small amount of evaporated milk.
  • If the sauce thickens too much while sitting, whisk in a tablespoon of milk or water until you reach your desired consistency.
