A bright, fluffy, and herb-infused rice side dish with a strong lemon flavor, perfect for pairing with grilled meats, seafood, or vegetarian main courses.

Ingredients

  • 1 tablespoon olive oil
  • 1 cup long-grain white rice, rinsed
  • 2 cups low-sodium vegetable broth
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat olive oil in a medium saucepan over medium heat.
  2. Add the rinsed rice and toast for 1-2 minutes until fragrant.
  3. Pour in the vegetable broth and bring to a boil.
  4. Reduce heat to low, cover, and simmer for 15-18 minutes, or until the liquid is absorbed and the rice is tender.
  5. Remove from heat and let stand, covered, for 5 minutes.
  6. Fluff the rice with a fork.
  7. Stir in the chopped parsley, dill, lemon zest, lemon juice, salt, and pepper.
  8. Serve immediately.

Notes

  • For extra flavor, you can add a pinch of garlic powder or onion powder with the salt and pepper.
  • If you prefer a stronger lemon flavor, add an additional teaspoon of lemon juice or zest.
  • This rice pairs well with grilled chicken, fish, or roasted vegetables.
