1 cup long-grain white rice, rinsed
2 cups low-sodium vegetable broth
1/4 cup fresh parsley, chopped
2 tablespoons fresh dill, chopped
1 tablespoon lemon zest
2 tablespoons fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Heat olive oil in a medium saucepan over medium heat.
Add the rinsed rice and toast for 1-2 minutes until fragrant.
Pour in the vegetable broth and bring to a boil.
Reduce heat to low, cover, and simmer for 15-18 minutes, or until the liquid is absorbed and the rice is tender.
Remove from heat and let stand, covered, for 5 minutes.
Fluff the rice with a fork.
Stir in the chopped parsley, dill, lemon zest, lemon juice, salt, and pepper.

Notes
