4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1/2 cup chicken broth
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 cup sun-dried tomatoes, drained and chopped
2 cloves garlic, minced
1 tablespoon butter
1 tablespoon fresh basil, chopped (for garnish)
Instructions
Season the chicken breasts on both sides with salt, pepper, and garlic powder.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5 to 7 minutes per side until golden brown and cooked through (internal temperature reaches 165°F). Remove the chicken from the skillet and set aside on a plate.
Reduce the heat to medium. Add the butter and minced garlic to the same skillet. Cook for about 1 minute until fragrant.
Stir in the chopped sun-dried tomatoes and cook for 1 minute.
Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
Reduce the heat to low. Stir in the heavy cream and allow the sauce to warm through. Do not boil.
Whisk in the grated Parmesan cheese until the sauce is smooth and thickened. Taste and adjust seasoning if needed.
