A simple and flavorful soy ginger marinade that makes tuna steaks tender and delicious in 30 minutes.

Ingredients

Scale
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon honey
  • 1 pound tuna steaks (about 1-inch thick)

Instructions

  1. In a shallow dish or a resealable plastic bag, whisk together soy sauce, rice vinegar, sesame oil, grated ginger, minced garlic, and honey.
  2. Add the tuna steaks to the marinade, ensuring they are fully coated.
  3. Marinate in the refrigerator for at least 15 minutes, or up to 30 minutes. Do not marinate for longer, as the acid can start to ‘cook’ the fish.
  4. Remove tuna from marinade and discard the marinade.
  5. Grill or pan-sear the tuna steaks to your desired doneness.

Notes

  • For grilling, preheat your grill to medium-high heat. Grill tuna steaks for 2-4 minutes per side for medium-rare, depending on thickness.
  • For pan-searing, heat a tablespoon of oil in a cast-iron skillet over medium-high heat. Sear tuna steaks for 2-4 minutes per side for medium-rare.
  • Internal temperature for medium-rare tuna is 115-120°F (46-49°C).
  • This marinade is also great for other firm fish like salmon or swordfish.
