  • 1 tablespoon olive oil

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 (28 ounce) cans crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt, divided
  • 1/2 teaspoon black pepper, divided
  • 1 (15 ounce) container whole milk ricotta cheese
  • 1 large egg, lightly beaten
  • 1/4 cup grated Parmesan cheese, plus more for topping
  • 2 tablespoons chopped fresh parsley
  • 4 cups shredded mozzarella cheese

Instructions

  1. Cook the lasagna noodles according to package directions until al dente. Drain the noodles and set them aside.
  2. If using meat, heat the olive oil in a large pot over medium heat. Add the ground meat and cook until browned. Drain off any excess fat.
  3. Add the chopped onion to the pot and cook until soft, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Stir in the crushed tomatoes, tomato sauce, oregano, basil, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Bring the sauce to a simmer, then reduce heat to low, cover, and cook for at least 20 minutes, stirring occasionally.
  5. While the sauce simmers, prepare the creamy ricotta lasagna filling. In a medium bowl, combine the ricotta cheese, beaten egg, Parmesan cheese, parsley, the remaining 1/2 teaspoon salt, and 1/4 teaspoon pepper. Mix well until fully combined. This is the best ricotta cheese mixture for lasagna.
  6. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  7. Begin assembling the layers. Spread a thin layer of meat sauce on the bottom of the prepared baking dish.

  14. Cover the baking dish tightly with aluminum foil. Bake for 25 minutes.
  15. Remove the foil and bake for an additional 20 to 25 minutes, or until the cheese is melted, bubbly, and lightly browned.
