A spicy smash burger with creamy cheese, jalapeños, and a ranch drizzle.

  • 1 pound ground beef (80/20)
  • 4 slices American cheese
  • 4 slices cheddar cheese
  • 2 fresh jalapenos, thinly sliced
  • 4 brioche buns, split
  • 2 tablespoons butter
  • 1/4 cup ranch dressing
  • Salt and black pepper to taste

Instructions

  1. Divide the ground beef into four equal portions. Form each portion into a loose ball.
  2. Heat a cast iron skillet over medium-high heat. Add the butter and let it melt.
  3. Place the beef balls into the hot skillet, leaving space between them. Immediately smash each ball down with a spatula until it is about 1/2 inch thick. Season generously with salt and pepper.
  4. Cook for 2-3 minutes, until the edges are browned and crispy.
  5. Top each smashed patty with two slices of cheese (one American, one cheddar). Add a few slices of jalapeno on top of the cheese.
  6. Cover the skillet with a lid or a metal bowl to steam-melt the cheese and cook the jalapenos for about 1-2 minutes.
  7. While the burgers are steaming, lightly toast the cut sides of the brioche buns in the skillet or on a separate griddle.
  8. Remove the burgers from the skillet.
  9. Spread ranch dressing on the bottom half of each toasted bun.
  10. Place a cheesy, jalapeno-topped burger patty on top of the ranch dressing.
  11. Add the top half of the bun.
  12. Serve immediately.

Notes

  • For extra spice, leave some seeds in the jalapenos.
  • You can add cooked bacon for a bacon jalapeno burger.
  • Ensure your skillet is hot before smashing the burgers for a good crust.
