1 pound ground beef (80/20)
4 slices American cheese
4 slices cheddar cheese
2 fresh jalapenos, thinly sliced
4 brioche buns, split
2 tablespoons butter
1/4 cup ranch dressing
Salt and black pepper to taste
Instructions
Divide the ground beef into four equal portions. Form each portion into a loose ball.
Heat a cast iron skillet over medium-high heat. Add the butter and let it melt.
Place the beef balls into the hot skillet, leaving space between them. Immediately smash each ball down with a spatula until it is about 1/2 inch thick. Season generously with salt and pepper.
Cook for 2-3 minutes, until the edges are browned and crispy.
Top each smashed patty with two slices of cheese (one American, one cheddar). Add a few slices of jalapeno on top of the cheese.
Cover the skillet with a lid or a metal bowl to steam-melt the cheese and cook the jalapenos for about 1-2 minutes.
While the burgers are steaming, lightly toast the cut sides of the brioche buns in the skillet or on a separate griddle.
Remove the burgers from the skillet.
Spread ranch dressing on the bottom half of each toasted bun.
Place a cheesy, jalapeno-topped burger patty on top of the ranch dressing.
Add the top half of the bun.
Serve immediately.
Notes
For extra spice, leave some seeds in the jalapenos.
You can add cooked bacon for a bacon jalapeno burger.
Ensure your skillet is hot before smashing the burgers for a good crust.
