Ingredients
Scale
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1/2 cup unsweetened cocoa powder
1/2 cup hot cocoa mix (standard packet type)
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup semi-sweet chocolate chips
1 cup mini marshmallows
1/2 cup powdered sugar (for dusting, optional)
Instructions
Preheat your oven to 350 degrees F. Line baking sheets with parchment paper.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.
In a separate medium bowl, whisk together the cocoa powder, hot cocoa mix, flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
Fold in the chocolate chips and mini marshmallows gently with a spatula.
Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 9 to 11 minutes. The edges should look set, but the centers will still look slightly soft. These are your chewy chocolate cookies.
Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
If desired, dust the cooled cookies lightly with powdered sugar for a snowy effect, mimicking a mug of hot cocoa.
Notes
For extra fudgy cookies, chill the dough for 30 minutes before scooping.
Use a good quality hot cocoa mix to get the best homemade hot cocoa flavor in your cookies.
If you want a slightly crispier edge, bake for an extra minute or two, but watch carefully to keep the center soft.
