Ingredients
Scale
1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
½ cup buttermilk
1 cup finely diced fresh or canned peaches, drained
For the Frosting:
8 ounces cream cheese, softened
½ cup unsalted butter, softened
2 cups powdered sugar
2 tablespoons honey
1 teaspoon vanilla extract
For Garnish (optional):
Fresh peach slices
Honey drizzle
Instructions
Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
Gently fold in the diced peaches.
Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full.
Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a cupcake comes out clean.
Let the cupcakes cool in the muffin tin for 5 minutes before transferring them to a wire rack to cool completely.
While the cupcakes cool, prepare the frosting. In a large bowl, beat together the softened cream cheese and butter until smooth.
Gradually add the powdered sugar, mixing until combined.
Stir in the honey and vanilla extract until the frosting is smooth and creamy.
Once the cupcakes are completely cool, frost them generously with the honey cream cheese frosting.
Garnish with fresh peach slices or a drizzle of honey, if desired.
Notes
For bakery-style domes, you can slightly increase the oven temperature for the last few minutes of baking, or use a higher fat content butter for the frosting.
If using canned peaches, ensure they are well-drained to prevent excess moisture in the batter.
You can add a pinch of cinnamon or nutmeg to the dry ingredients for extra flavor.
