Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 tablespoon olive oil or vegetable oil
  • 1 head broccoli, cut into florets
  • 1 red bell pepper, sliced
  • 1 cup carrots, sliced thinly or cut into matchsticks
  • 1/2 cup low-sodium soy sauce
  • 1/2 cup honey
  • 1/4 cup water
  • 2 tablespoons rice vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch
  • Cooked rice or noodles, for serving
  • Green onions, sliced, for garnish

Instructions

  1. Prepare the sauce: In a small bowl, whisk together the soy sauce, honey, water, rice vinegar, minced garlic, ground ginger, and red pepper flakes (if using). In a separate tiny bowl, mix the cornstarch with 1 tablespoon of cold water to create a slurry; set aside.
  2. Cook the chicken: Heat the oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
  3. Stir-fry vegetables: Add the broccoli, bell pepper, and carrots to the same skillet. Stir-fry for 4 to 6 minutes until the vegetables are tender-crisp. You want them bright and slightly firm.
  4. Combine and glaze: Return the cooked chicken to the skillet with the vegetables. Pour the prepared honey garlic sauce mixture over the chicken and vegetables. Bring the sauce to a simmer.
  5. Thicken the sauce: Whisk the cornstarch slurry one last time and slowly pour it into the simmering sauce while stirring constantly. Continue to cook for 1 to 2 minutes until the sauce thickens and becomes glossy and sticky, coating everything evenly.
  6. Serve immediately: Remove from heat. Serve your sticky glazed chicken over hot rice or noodles. Garnish with sliced green onions.

Notes

  • For extra flavor, use chicken thighs instead of breasts; they stay juicier during high-heat cooking.
  • If you prefer a thicker sauce, increase the cornstarch to 1.5 tablespoons.
  • Feel free to swap vegetables based on what you have; snap peas or mushrooms work well in this quick chicken stir fry.
  • This recipe makes excellent meal prep chicken stir fry when stored separately from the rice.
