You can make this satisfying Homemade Reuben Bake Casserole that captures all the classic deli sandwich flavors in one simple, cheesy dish. It is perfect for a hearty weeknight dinner or a game day spread.

  • 1 pound sliced corned beef, chopped
  • 1 (16 ounce) can sauerkraut, drained well
  • 1 tablespoon butter
  • 1/2 cup chopped onion
  • 1 teaspoon caraway seeds
  • 1/2 cup Thousand Island dressing
  • 1 (10.5 ounce) can cream of mushroom soup, undiluted
  • 1 cup Swiss cheese, shredded
  • 4 cups rye bread, cubed (about 6 slices)
  • 1/2 cup Swiss cheese, shredded (for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, melt the butter. Add the chopped onion and cook until soft, about 5 minutes. Stir in the caraway seeds and cook for 1 minute more until fragrant.
  3. In a large bowl, combine the chopped corned beef, drained sauerkraut, cooked onion mixture, Thousand Island dressing, and cream of mushroom soup. Mix gently until everything is combined.
  4. Fold in the 1 cup of shredded Swiss cheese and the cubed rye bread into the meat mixture. Stir just until the bread is coated.
  5. Transfer the mixture to your prepared baking dish, spreading it into an even layer.
  6. Bake for 25 minutes.
  7. Remove the dish from the oven and sprinkle the remaining 1/2 cup of Swiss cheese over the top.
  8. Return the casserole to the oven and bake for another 5 to 10 minutes, or until the cheese is melted and bubbly and the edges are lightly browned.
  9. Let the Reuben Bake rest for 5 minutes before you serve it.
