  • 4 cups rolled oats
  • 1 cup mixed nuts (almonds, walnuts, pecans)
  • 1/2 cup seeds (pumpkin seeds, sunflower seeds)
  • 1/2 cup melted coconut oil or vegetable oil
  • 1/2 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup dried fruit (raisins, cranberries, apricots), optional

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, mixed nuts, and seeds.
  3. In a separate small bowl, whisk together the melted coconut oil, maple syrup, vanilla extract, cinnamon, and salt.
  4. Pour the wet ingredients over the dry ingredients and stir until everything is evenly coated.
  5. Spread the mixture in a single layer on the prepared baking sheet.
  6. Bake for 25-30 minutes, stirring halfway through, until the granola is golden brown and toasted.
  7. Let the granola cool completely on the baking sheet. It will crisp up as it cools.
  8. If using dried fruit, stir it in once the granola has cooled.
  9. Store the granola in an airtight container at room temperature.
