  • 1 tablespoon olive oil
  • 1 pound lean ground turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 cup broccoli florets
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 cup chicken broth or water

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  3. Add chopped onion and cook until softened, about 5 minutes.
  4. Stir in minced garlic and cook for 1 minute more until fragrant.
  5. Add chopped bell peppers and broccoli florets to the skillet.
  6. Season with Italian seasoning, salt, and pepper.
  7. Cook, stirring occasionally, until vegetables are tender-crisp, about 8-10 minutes. If the skillet seems dry, add a splash of chicken broth or water.
  8. Serve hot.
