1 pound ground beef
1 onion, chopped
2 cans (10.5 ounces each) condensed cream of mushroom soup
1/2 cup milk
1 teaspoon salt
1/4 teaspoon black pepper
2 cups frozen diced potatoes, thawed
1 cup shredded cheddar cheese
Instructions
Preheat your oven to 375 degrees F (190 degrees C).
In a large skillet, brown the ground beef and chopped onion over medium heat. Drain off any excess grease.
Stir in the condensed cream of mushroom soup, milk, salt, and pepper. Mix well.
Add the thawed diced potatoes to the skillet and stir to combine with the beef mixture.
Pour the mixture into a 9×13 inch baking dish.
Sprinkle the shredded cheddar cheese evenly over the top.
Bake for 25-30 minutes, or until the casserole is bubbly and the cheese is melted and lightly browned.
Notes
For a creamier sauce, you can use 1 cup of milk instead of 1/2 cup.
If you don’t have cream of mushroom soup, you can substitute with cream of chicken or cream of celery soup.
You can add other vegetables like peas or carrots for extra flavor and nutrition.
This casserole can be assembled ahead of time and refrigerated. Add a few extra minutes to the baking time if baking from cold.
