2 lbs boneless, skinless chicken breasts or thighs
1 cup plain Greek yogurt
1/4 cup fresh lemon juice
3 tablespoons olive oil
4 cloves garlic, minced
2 teaspoons dried oregano
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
In a medium bowl, whisk together the Greek yogurt, lemon juice, olive oil, minced garlic, oregano, thyme, salt, and pepper to create the marinade.
Place the chicken in a large zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are fully coated.
Seal the bag or cover the dish and refrigerate for at least 2 hours, or preferably up to 8 hours, to tenderize the chicken.
Preheat your oven to 400°F (200°C). Lightly grease a baking sheet or line it with parchment paper.
Remove the chicken from the marinade, letting excess drip off, and place it on the prepared baking sheet in a single layer. Discard the remaining marinade.
Bake for 20 to 25 minutes, or until the internal temperature reaches 165°F (74°C) and the juices run clear. Cooking time will vary based on chicken thickness.
Let the chicken rest for 5 minutes before slicing or serving.
Notes
For extra flavor, add 1 teaspoon of smoked paprika to the marinade mixture.
If grilling, cook over medium heat for 5-7 minutes per side until done.
