Make incredibly juicy and flavorful Greek chicken using a simple marinade based on Greek yogurt, lemon, and garlic. This recipe is easy to prepare and perfect for a healthy weeknight dinner.

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 cup plain Greek yogurt
  • 1/4 cup fresh lemon juice
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a medium bowl, whisk together the Greek yogurt, lemon juice, olive oil, minced garlic, oregano, thyme, salt, and pepper to create the marinade.
  2. Place the chicken in a large zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are fully coated.
  3. Seal the bag or cover the dish and refrigerate for at least 2 hours, or preferably up to 8 hours, to tenderize the chicken.
  4. Preheat your oven to 400°F (200°C). Lightly grease a baking sheet or line it with parchment paper.
  5. Remove the chicken from the marinade, letting excess drip off, and place it on the prepared baking sheet in a single layer. Discard the remaining marinade.
  6. Bake for 20 to 25 minutes, or until the internal temperature reaches 165°F (74°C) and the juices run clear. Cooking time will vary based on chicken thickness.
  7. Let the chicken rest for 5 minutes before slicing or serving.

Notes

  • For extra flavor, add 1 teaspoon of smoked paprika to the marinade mixture.
  • If grilling, cook over medium heat for 5-7 minutes per side until done.
  • This chicken is excellent for meal prep and tastes great served cold over salads.
