Make these simple, elegant appetizer bites using flaky puff pastry, creamy goat cheese, and a sweet honey drizzle. They are perfect for parties and wine nights.

  • 1 sheet frozen puff pastry, thawed
  • 4 ounces soft goat cheese, chilled
  • 2 tablespoons honey
  • 1 teaspoon fresh thyme leaves
  • 1 egg, beaten (for egg wash)
  • Pinch of salt

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
  2. Lightly flour a clean surface. Unfold the thawed puff pastry sheet. Cut the pastry into 12 equal squares.
  3. Place the pastry squares onto the prepared baking sheet. Gently score a smaller square border inside each larger square, being careful not to cut all the way through the pastry. This helps the edges puff up.
  4. Place about 1 teaspoon of chilled goat cheese into the center of each scored square.
  5. Brush the edges of the pastry squares lightly with the beaten egg wash. This promotes golden browning.
  6. Bake for 12 to 15 minutes, or until the pastry is puffed and golden brown.
  7. Remove the bites from the oven. Immediately drizzle the honey over the warm goat cheese centers.
  8. Sprinkle the fresh thyme leaves and a small pinch of salt over the honey.
  9. Serve these gourmet cheese bites warm or at room temperature.

Notes

  • For extra texture, press crushed pistachios or walnuts onto the goat cheese before baking.
  • If you want a spicy kick, use hot honey instead of regular honey.
  • These are excellent served alongside crackers or small slices of toasted baguette (crostini topping ideas).
