Pat the steak cubes dry with paper towels and season them evenly with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat until shimmering.
Add the steak cubes to the hot skillet in a single layer, ensuring not to overcrowd the pan. Work in batches if necessary.
Sear the steak for 2-3 minutes per side until browned on the outside. Remove the steak from the skillet and set aside.
Reduce the heat to medium-low. Add the butter to the same skillet.
Once the butter is melted, add the minced garlic and Italian seasoning. Cook for about 1 minute until the garlic is fragrant, being careful not to burn it.
Return the seared steak bites to the skillet. Toss them gently to coat completely in the garlic butter sauce.
Cook for 1-2 minutes more, basting the steak with the sauce, until the steak reaches your desired doneness (medium-rare is recommended for tenderness).
Remove from heat. Garnish with fresh chopped parsley before serving immediately.

If you want a creamy garlic butter steak, add 1/4 cup of heavy cream to the pan after removing the steak, then stir until slightly thickened before returning the steak.
