A simple and quick fruit pizza using refrigerated sugar cookie dough and a cream cheese frosting, perfect for a crowd-pleasing dessert.

  • 1 (16.5 ounce) package refrigerated sugar cookie dough
  • 1 (8 ounce) package cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups assorted fresh fruit, sliced or chopped (strawberries, blueberries, kiwi, mandarin oranges, raspberries)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Press the sugar cookie dough evenly into the bottom of a 12-inch pizza pan or a baking sheet lined with parchment paper.
  3. Bake for 12-15 minutes, or until the edges are golden brown and the center is set. Let the cookie crust cool completely on a wire rack.
  4. While the crust cools, prepare the frosting. In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  5. Spread the cream cheese frosting evenly over the cooled sugar cookie crust.
  6. Arrange the assorted fresh fruit over the frosting to create your desired design.
  7. Slice and serve immediately.

Notes

  • For mini fruit pizzas, press cookie dough into mini muffin tins and bake for 8-10 minutes. Frost and top with fruit after cooling.
  • You can use a store-bought frosting if you prefer to save time.
  • Ensure your fruit is dry before placing it on the pizza to prevent the frosting from becoming watery.
  • Consider using a glaze made from melted apricot jam for extra shine on your fruit.
