  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 cup packed light brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 3/4 cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar mixed with 2 tablespoons ground cinnamon (for topping)
  • 1 (21 ounce) can apple pie filling (optional, for extra gooeyness)
  • 1/2 cup caramel sauce (optional)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Grease a 9×13 inch baking dish.
  2. In a large bowl, cream together the softened butter, 1 1/2 cups granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix the dough.
  6. If using apple pie filling, spread the filling evenly over the bottom of the prepared baking dish. Drizzle with caramel sauce if desired.
  7. Drop spoonfuls of the snickerdoodle dough over the filling, spacing them out evenly. The dough will spread as it bakes.
  8. In a small bowl, mix the 1/2 cup granulated sugar and 2 tablespoons cinnamon for the topping. Sprinkle this cinnamon-sugar mixture generously over the dough.
  9. Bake for 35 to 45 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out mostly clean.
  10. Let the cobbler cool slightly before serving warm, preferably with vanilla ice cream.

Notes

  • For a true snickerdoodle tang, do not skip the cream of tartar in the dough.
  • If you skip the apple pie filling, you can use a thin layer of softened cream cheese mixed with a tablespoon of sugar on the bottom instead for a rich base.
