12 oz butterscotch chips
1 cup creamy peanut butter
1 (3 oz) can chow mein noodles
1 cup dry roasted peanuts (optional)
Instructions
Line a baking sheet with parchment paper.
In a medium microwave-safe bowl, combine the butterscotch chips and peanut butter.
Microwave on medium power for 30 seconds. Stir well. Continue microwaving in 15-second intervals, stirring after each, until the mixture is smooth and fully melted.
Stir in the chow mein noodles and peanuts (if using) until everything is evenly coated.
Drop rounded tablespoons of the mixture onto the prepared baking sheet.
Let the cookies set at room temperature for about 30 minutes, or place them in the refrigerator for 10 minutes to set faster.
Notes
For chocolate haystacks, substitute semi-sweet chocolate chips for the butterscotch chips.
For a variation, use half butterscotch chips and half milk chocolate chips.
