Easy Roasted Honey Glazed Carrots with Brown Sugar and Garlic

Make tender, caramelized honey glazed carrots with a sweet and savory brown sugar and garlic coating. This simple roasted side dish is perfect for weeknight dinners or holiday feasts.

Ingredients

  • 2 lbs carrots, peeled and sliced into 1-inch pieces
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1/4 cup honey
  • 3 tablespoons brown sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried thyme

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Toss the prepared carrots with 1 tablespoon of melted butter on a baking sheet. Spread them in a single layer.
  3. Roast the carrots for 15 minutes until they start to become tender.
  4. While the carrots roast, prepare the glaze. In a small saucepan over medium heat, melt the remaining 3 tablespoons of butter.
  5. Add the minced garlic to the saucepan and cook for 30 seconds until fragrant. Do not let the garlic brown.
  6. Stir in the honey, brown sugar, salt, pepper, and thyme. Cook, stirring constantly, until the sugar dissolves and the mixture thickens slightly, about 2 minutes.
  7. Remove the carrots from the oven. Pour the honey glaze mixture over the hot carrots and toss gently to coat them evenly.
  8. Return the glazed carrots to the oven and roast for another 10 to 15 minutes, or until the carrots are tender and the glaze is caramelized and glossy.
  9. Serve immediately as a sweet and savory carrots side dish.

Notes

  • For extra flavor, substitute maple syrup for half of the honey.
  • If you prefer a stovetop method, simmer the carrots in water until just tender, drain them, then add the glaze ingredients and cook until the sauce reduces and coats the carrots.
