  • 1 packet (1 ounce) taco seasoning mix
  • 1 cup water or chicken broth
  • 12 small corn or flour tortillas
  • Toppings: chopped onion, fresh cilantro, lime wedges, salsa

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 3-4 minutes per side until lightly browned.
  2. Sprinkle the taco seasoning evenly over the chicken. Pour in the water or broth.
  3. Bring the liquid to a simmer, then reduce the heat to low, cover the skillet, and cook for 10-12 minutes, or until the chicken is cooked through (internal temperature of 165°F).
  4. Remove the chicken from the skillet and place it on a cutting board. Use two forks to shred the chicken completely.
  5. Return the shredded chicken to the skillet and toss it with the remaining cooking liquid until the chicken is fully coated and juicy.
  6. Warm your tortillas according to package directions (you can warm them briefly in a dry skillet or microwave).
  7. Assemble your tacos: place a portion of the juicy shredded chicken onto each warm tortilla. Top with chopped onion, cilantro, and serve immediately with salsa and lime wedges.
