Make this simple, hearty meatloaf casserole for a comforting family dinner. It combines savory ground beef with creamy potatoes and melted cheese for a satisfying one-dish meal.

  • 2 lbs ground beef
  • 1 cup bread crumbs
  • 1 large egg, lightly beaten
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried parsley
  • 1/2 cup ketchup (for mixing)
  • 2 cups frozen mixed vegetables (peas, carrots, corn)
  • 1 cup shredded cheddar cheese
  • 1 cup mashed potatoes (prepared)
  • 1/4 cup extra ketchup (for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the ground beef, bread crumbs, egg, milk, chopped onion, salt, pepper, parsley, and 1/2 cup of ketchup. Mix gently with your hands until just combined; do not overmix.
  3. Press the meat mixture evenly into the bottom of the prepared baking dish.
  4. Sprinkle the frozen mixed vegetables evenly over the meat layer.
  5. Spread the prepared mashed potatoes over the vegetable layer.
  6. Sprinkle the shredded cheddar cheese over the mashed potatoes.
  7. Dollop the remaining 1/4 cup of ketchup over the top and spread lightly.
  8. Bake for 45 minutes, or until the meat is cooked through and the cheese is melted and bubbly.
  9. Let the casserole rest for 10 minutes before slicing and serving.

Notes

  • For a richer flavor, use smoked turkey bacon mixed in with the ground beef mixture.
  • You can prepare the meat mixture and layer the casserole the day before. Cover and refrigerate, then add 10-15 minutes to the total bake time if baking cold.
  • This recipe is a great option for meal prepping; leftovers reheat well for quick weeknight dinners.
