1 (15-ounce) can black beans, rinsed and drained
1/4 cup fresh cilantro leaves
2 tablespoons fresh lime juice
1 clove garlic
1 tablespoon olive oil
1/2 teaspoon ground cumin
1/4 teaspoon salt, or to taste
Pinch of cayenne pepper (optional, for spice)
Instructions
Place the rinsed and drained black beans, cilantro, lime juice, garlic, olive oil, cumin, salt, and cayenne pepper (if using) into a food processor.
Process the ingredients until the mixture is mostly smooth. Stop and scrape down the sides as needed.
For a creamier texture, add 1 to 2 tablespoons of water while processing until you reach your desired consistency.
Taste the dip and adjust salt or lime juice as necessary.
Transfer the dip to a serving bowl. Serve immediately with tortilla chips or fresh vegetables.
Notes
For a hotter dip, increase the cayenne pepper or add a small amount of chopped jalapeño during processing.
If you do not have a food processor, you can mash the beans well with a fork and then vigorously whisk in the remaining ingredients until combined. The texture will be less smooth.
This dip is excellent served cold or at room temperature.
