A nostalgic 1980s Midwest potluck favorite, this taco salad features seasoned ground beef, Catalina dressing, and crunchy Nacho Cheese Doritos. Learn make-ahead layering tips to keep it fresh and discover lighter turkey variations.

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 head iceberg lettuce, shredded
  • 1 cup shredded cheddar cheese
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sliced black olives
  • 1 cup Nacho Cheese Doritos, crushed
  • 1 cup Catalina dressing
  • Optional: 1 pound ground turkey (for a lighter version)

Instructions

  1. Cook the ground beef in a skillet over medium-high heat until browned. Drain excess fat.
  2. Stir in the taco seasoning and water. Simmer for 5 minutes, or until the sauce has thickened. If using ground turkey, follow the same steps.
  3. In a large bowl, layer the ingredients in the following order: shredded lettuce, seasoned beef mixture, cheddar cheese, cherry tomatoes, and black olives.
  4. Just before serving, add the crushed Doritos and drizzle with Catalina dressing. Toss gently to combine.
  5. For make-ahead convenience, keep the dressing and crushed Doritos separate and add them right before serving to prevent sogginess.

Notes

  • For a lighter option, substitute ground turkey for ground beef.
  • To keep the salad from getting soggy, layer the dressing and Doritos just before you plan to serve it.
  • This salad is a great make-ahead dish for potlucks and parties.
