A cheesy, Tex-Mex inspired casserole featuring seasoned ground beef, Rotel tomatoes, a creamy sauce, and a crunchy Dorito topping. This easy bake is perfect for busy weeknights or game day.

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can (10 ounces) Rotel diced tomatoes and green chilies, undrained
  • 1 can (10.5 ounces) condensed cream of chicken soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 1 bag (9 ounces) Doritos, crushed

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef over medium-high heat until browned. Drain off any excess grease.
  3. Stir in the taco seasoning and Rotel tomatoes (with their liquid) into the skillet with the beef. Cook for 2 minutes, stirring occasionally.
  4. In a separate bowl, mix together the condensed cream of chicken soup and sour cream.
  5. Add the beef mixture and 1 cup of the shredded cheddar cheese to the cream soup mixture. Stir until well combined.
  6. Spread the mixture evenly into a 9×13 inch baking dish.
  7. Top the casserole evenly with the crushed Doritos.
  8. Sprinkle the remaining 1 cup of cheddar cheese over the Doritos.
  9. Bake for 20-25 minutes, or until the casserole is hot and bubbly and the cheese is melted.
  10. Let stand for 5 minutes before serving.

Notes

  • For a chicken version, substitute 2 cups of cooked, shredded chicken for the ground beef.
  • You can assemble this casserole ahead of time and refrigerate it. Add a few extra minutes to the baking time if baking from cold.
  • For a spicier casserole, use Rotel diced tomatoes and green chilies with jalapeños.
