No-Bake Dark Chocolate Oatmeal Cups

Easy, no-bake oatmeal cups with peanut butter and dark chocolate. Perfect for a quick, healthy snack or meal prep treat.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup peanut butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup dark chocolate chips
  • 1 tablespoon chia seeds (optional)
  • Pinch of sea salt (optional)

Instructions

  1. Line a mini muffin tin with paper liners.
  2. In a medium bowl, combine rolled oats, peanut butter, and honey or maple syrup. Mix until well combined.
  3. If using, stir in chia seeds and sea salt.
  4. Press the oat mixture evenly into the bottom of each mini muffin cup.
  5. Sprinkle dark chocolate chips over the top of each cup.
  6. Place the muffin tin in the refrigerator and chill for at least 30 minutes, or until firm.
  7. Once set, remove from the muffin tin and store in an airtight container.

Notes

  • Store in the refrigerator for up to a week.
  • For longer storage, freeze the cups in an airtight container for up to 2 months.
  • You can substitute almond butter or sunflower seed butter for peanut butter.
  • Add a sprinkle of flaky sea salt on top of the chocolate chips for extra flavor.
